What is HACCP?

Hazard Analysis and Critical Control Point. HACCP is a systematic approach to identifying and controlling hazards (microbiological, chemical or physical) that could pose a danger to the preparation of safe food.

Ultimately it’s about ensuring food is safe for consumption. In practical terms this means operating a safe kitchen, canteen, deli, or food preparation area that will not cause harm to coworkers or the public. The principles of HACCP have been developed to protect against poisoning. The growing, delivery, preparing, and serving of food are all a part of this.

Benefits of HACCP S.A.F.E.F.O.O.D.

There are a number of benefits of Following the HACCP Principles. A way to remember these benefits is to remember the term SAFE FOOD. S: Saves your business money in the long run A: Avoids accidentally poisoning your customers F: Food safety standards increase E: Ensures you are doing things legally F: Food quality standards increase O: Organises your work process so you serve safe food O: Organises your staff and promotes teamwork and efficiency D: Due diligence—if you are sued, but can prove you've done what is expected of you and are not negligent.

A regulated qualification is delivered by a learning institution which is regulated by a government body. In England, the government body which regulates courses is Ofqual. Ofqual regulated qualifications sit on the Regulated Qualifications Framework (RQF), which can help students understand how different qualifications in different fields compare to each other. The framework also helps students to understand what qualifications they need to progress towards a higher learning goal, such as a university degree or equivalent higher education award.

An endorsed course is a skills based course which has been checked over and approved by an independent awarding body. Endorsed courses are not regulated so do not result in a qualification - however, the student can usually purchase a certificate showing the awarding body's logo if they wish. Certain awarding bodies - such as Quality Licence Scheme and TQUK - have developed endorsement schemes as a way to help students select the best skills based courses for them.
