Overview
Cross-contamination is one of the greatest risks in the Food Sector to the health of the public.
Cross-contamination occurs when harmful bacteria transfers to ready-to-eat food from another source.
EU regulations require all food businesses to protect customers against the risks of cross contamination. Food Standards Scotland has created guidance to help businesses understand what they need to do in Scotland to satisfy Environmental Health Officers and fulfil the requirements of the EU regulations.
This course is based on the Food Standard Scotland guidelines.

Provide food business operators with an understand of how to reduce the risks of Cross-contamination. This is very important because E. coli 0157 is a particularly harmful bacterium and food business must ensure their ready to ready foods are not be contaminated by it.
