Overview
The Government is committed to reducing death and ill health caused by diet-related disease. More than ever, caterers and those preparing and serving food for others need to understand the link between diet and health. Based on the syllabus of the Level 2 Award in Healthier Food and Special Diets, this course covers the basic principles of nutrition which underpin the production of healthy food, the preparation of special diets, and the effect that nutrition has on our health.
This course has been designed to provide a good, basic understanding of nutrition and is aimed at those who are employed in catering environments and involved in the selection of menus, recipes and ingredients. It is also relevant for those in the health care, health promotion and education sectors, and for anyone interested in healthy eating purely for themselves and their own family. Those involved in the promotion and marketing of food products and services would also benefit from learning the basics of nutrition and health.
Successful completion of the training programme and assessment will enable candidates to:
- Plan healthy meals based around current dietary guidelines
- and an understanding of how to plan healthy meals for different groups of people and age groups
- Understand specific standards and recommendations that apply to catering for certain groups of people with special requirements
- Understand how food preparation and processing affects the nutritional value of food
