Description

MODULE 1 – NUTRITION AND DIETETICS

This module cover the basic menu structure,vegetarian choices, different food groups, vitamins and minerals. Nutritional value of commodities and purchasing and storing of food stuffs is also covered.

MODULE 2 – KITCHEN MAINTENANCE AND DESIGN

This module covers the principles of kitchen design.

MODULE 3 – FOOD SAFETY

This module explains about the different aspects of food safety, about cleaning schedules, prevention of pests and infestation in food.

MODULE 4 – SAFETY AT WORK

This module covers the different aspects of safety to be observed when using hazardous substances, using equipment and machinery. It also tells the checklist to be followed for handling emergencies and about checklist for protective wear.

MODULE 5 – BUDGETING, COSTING AND CONTROL

This module teaches about the different factors used to evaluate financial performance,factors that determine purchasing requirements. It touches upon the topics of purchasing control, portion control and how to calculate the value of goods and services.

MODULE 6 – MENU PLANNING

This module covers the topic of types of menu,factors to consider while planning a menu, etc

MODULE 7 – PREPARATION AND SERVICE OF VARIOUS FOODS.

This module touches upon the topics of preparation, and service of various types of pulses, vegetables and also different types of stock,soups and sauces.

MODULE 8 – PREPARATION AND SERVICE OF FARINACEOUS, PASTA AND RICE DISHES

This module covers about the various types of pasta and rice to be used in cooking and also touches upon the various methods of cooking the same

MODULE 9 – PREPARATION AND SERVICE OF EGG DISHES,SAVOURIES, MEAT AND POULTRY DISHES

This module covers the topic of preparation, cleaning, cooking and storing of eggs, meat and poultry. It also talk about the various dishes that can be prepared and the methods of service for them.

MODULE 10 – PREPARATION AND SERVICE OF PASTRY DISHES AND COLD PREPARATION DISHES

This module touches upon the preparation and service of pastry dishes and cold preparation dishes. It also throws light on the variety of pastry , desserts and cold preparation dishes.

MODULE 11 – PREPARATION AND SERVICE OF COLD PREPARATION DISHES

The aim of this module is to tell the learners about the various techniques of preparing and presenting the cold preparation dishes.

MODULE 12 – PREPARE AND BAKE CAKES AND SPONGE,CHEMICALLY AERATED PRODUCTS,FERMENTED PRODUCTS AND PASTE BASED GOODS

This module covers the preparation , baking and finishing of various types of cakes, sponges , and paste based goods. The preparation of chemically aerated and fermented products is discussed in this module.

MODULE 13 – PREPARE AND USE CREAMS, FILLING GLAZE AND MEDIUMS

This module touches upon the different types of creams, filling glaze and mediums like chocolate compound, sugar craft and boiled sugar.

MODULE 14 – PREPARATION OF DESSERTS

This module gives an insight about the varieties of desserts prepared from different ingredients.Fruit based, egg set, gelatine set, meringue based and simple frozen desserts have covered in this module.
