My client venues forecast is to finish on nearly £1.7m this year, £1m of this coming from the restaurant and private dining/events, including BBQ's etc and the remaining £700k from bar lead sales. Across my clients' brand they focus on the fact they source all their meats from their own farm and this is absolutely the cornerstone of what they do as a company. It is neither a gastro pub nor fine dining, but covers everything between these two different styles. It is just as happy with burgers in the bar as with degustation menus in the private dining room.
There have a wonderful customer base, that needs to be nurtured and built on, and consistent customer service is the key to this. They carry have so many different strands to the mix: drinkers, diners, bar bookings and platters, mixology classes, wine tastings, supper clubs, private dining, hog roasts, terrace parties to name but a few. This means it's a constantly changing set up and customer mix, which needs to be adapted to, they deliver a good product at the moment, but want to deliver a great product that is a market leader so they become more of a destination venue.
They are also investing in a large refurbishment over a 6 week period in the summer. With an exciting time ahead and big plans to revamp the whole of the inside and outside space. They have an exciting chef team leading the food, and are looking for a new manager to lead the team through the summer, into the refurbishment, and bring new life to the business when it reopens post refurbishment, ready to remake its mark in the food and drink scene of London.
The Role and Person
The Operations Manager will be supported by the Bar Manager and Restaurant Manager takes full responsibility for the operational and financial performance of my clients' restaurant, bar and private dining room.
The role will have a balanced focus between service standards, timings, quality of food and beverage and hospitality delivered by his/her team. They will become a face of the business, delivering exceptional hospitality and solid leadership for the team in there. They will ensure standards are high, but a sense of personality isn't lost. The venue should become people's local, either for drinking or dining, and hospitality it key to this.
The role is challenging and fast paced and requires the candidate to be hands-on, flexible and capable of dealing with high pressure situations. The role is based on shift patterns that cross 7 days a week of trading and will require you to be in the business during our key trading times. It is operational not office based, and needs someone who is hungry to deliver on the job training, personality lead service and flair across all that we do.
The ideal candidate will display a passion for the hospitality industry and have a strong track record working in similar positions across bars, pubs or restaurants - but ideally with a background in all of these areas. They will be proactive, conscientious, have a keen eye for detail, and be structured and organised and able to work under their own initiative. They will also have a passion for food and drink, and be creative and innovative with ways to improve our business. A good understanding of good food as well as wines/craft beers/cocktails desirable.
Salary: £40- 43,000 per annum plus long-term bonus package related to the budget expectations around the refurbishment
