What we do

The Doll’s House is one of St Andrew’s most recognisable spots to eat & drink.

Specialising in hearty “good mood food”, The Doll’s House offers a diverse range of quality offers- from weekend brunch to value market menu dining. As well as an abundance of fresh scones and pastries, the main menu is packed full of lighter bites like big bowl salads and shellfish specials, along with a hearty mix of casseroles and roasts. We like to think there are some nice little touches too, like the “Eden Brewery Beer Battered Fish”.

Our portfolio of places has been decades in the making, and includes fine dining restaurants, boutique hotels, state of the art nightclubs, bijoux cinemas and even a casino because we were feeling lucky. We’ve got Scotland’s smallest pub, The UK’s only independent IMAX cinema, Edinburgh’s 2nd biggest Christmas Tree, and a Guinness World Record.

Throughout the years, we have developed a special interest in rejuvenating and reinventing Grade A & B listed buildings of historical and architectural importance. Some of our favourite spaces include a former bank, an institutional prison and a golf club factory. Our own central office is housed in the former BBC Scotland headquarters in Glasgow’s leafy West End.

Success Stories:

Peter Gunn - General Manager, The Social at Royal Exxhange Square.

Having joined the bar team at The Social while he completed his Fine Art degree, Peter developed a passion and flair for the bustling bar scene and quickly realised his calling. Throughout his years with G1, he has worked his way up the management ladder, and now hold the General Manager position at one of Glasgow’s most institutional bars.

Peter is a very skilled bartender and often supports in the development and support of new bars and openings.

Paul Green - Operations Manager

Paul started his hospitality career as a teenager sorting bottles and tidying the cellar in a friend’s pub. Fast forward a decade or two, and Paul has become one of the most dynamic and experienced Operations Managers within the business.

From managing a pub franchise of 400+ units, to previous roles as a Brand Manager for Heineken and a stint at Brewdog, Paul’s specialism is boutique hotels and restaurants.

Nicola McPherson - Marketing Manager

Having been with the company since 2011, Nicola joined the creative team on a part time basis as a copywriter straight from University, having graduated with an honours degree in Media & Communication. In 2014 she was promoted to Group Marketing Manager having held the position on a temporary basis, before being made Head of Department in 2015.

She is responsible for overseeing the graphics output and managing the workflow for the wider team, as well as PR and strategy support. She has helped launch over 20 new opening projects with G1.

Lewis Smith - Operations Support Chef

Since joining the business as a Kitchen Porter in 2008, in his almost decade long career at G1, Lewis has worked in almost every G1 venue within the greater Glasgow area. Having worked his way up rapidly to Commis, several years of hard work and training & development led to his appointment as Head Chef as Arta.

Having recently been promoted to Operations Support Chef, he maintains a key role within the business and is responsible for on-site support & training, food spec and company procedure & compliance.

Stefan King - Managing Director

Stefan King has been at the helm of G1 Group for over 25 years, having started out with the rather unassuming launch of renowned Glasgow nightspot Club X in Royal Exchange Square. Fast-forward quarter of a century later, he heads up one of Scotland’s most successful and diverse hospitality groups. With a particular interest in the regeneration and restoration of listed buildings, Stefan has become a restaurateur, hotelier, property developer and everything else in between.

Asked to provide some background on his story before G1, he simply replied there wasn’t one.
