Tonic is exclusively recruiting for a Head Baker/Bakery Manager for our client's artisan bakery, production unit, and retail space. This is a challenging and highly rewarding opportunity for a candidate with top-level artisan bakery experience, drive, passion, and creativity. The successful candidate will have complete control of the bakery's direction, including growing B2B sales.

What experience and attributes are we looking for in the successful candidate?

• Experience leading teams within a bakery/patisserie setting
• An exceptional skill set with an in-depth knowledge of breads and pastries, including lamination
• Passionate about food with great attention to detail
• Highly organised and self-motivated
• Ability to Identify potential improvements (products, methods, environment, H&S, etc.) whilst maintaining and promoting excellent teamwork
• Manage the department through training and developing, coaching, and providing on-the-job training
• Manage stock control, ordering and wastage
• Someone who takes ownership of people management practises, including performance and disciplinary conversations
• Experience in the retail side of the business is also desirable
