The opportunity:

Global Talent 2020 are proudly working with a Luxury historic hotel estate near the Scottish borders. They are looking for a Restaurant Manager to lead one of their fine dining experiences at their hotel venue. Our client is looking for a Restaurant Manager, to drive, nurture and support the existing F&B team and services, with the delivery of memorable dining experiences for its customers.

The standard of the service of the hotel is 5 star and would only suit an individual who has worked to a 2 AA rosette standard or above. All the ingredients are sourced from the local area and the menu is 100% fresh.

This individual will be responsible for managing a small intimate 40 cover fine dining restaurant serving an exclusive tasting menu, shift patterns being from 3pm until closing the restaurant around 11pm and they will be responsible for managing 2-3 staff.

This will be a 48 hour contract across 5 days.

The role:

The Restaurant Manager will support the Food and Beverage Manager, across the luxury bar, and three beautiful restaurant areas within the venue including a rosette level fine dining 90 cover restaurant, a 35-cover brasserie and 30-cover outdoor bistro. The responsibilities would mainly include running the smaller restaurant, opening this Summer. With a team on hand, to lead across the property, to ensure that the quality delivery of guest food and drink experiences are consistently maintained against the exceptional high standards.

You will be used to being customer facing and lead the F&B operations by example. With an eye for detail, remembering repeat customers/regulars, whilst being alive to maximising commercial opportunities. You will manage the staff across front of house restaurant, in room dining, and bar areas as required. Sound understanding of a departmental P&L, stock controls, cellar management, health &safety, training, and development, whilst possessing first-class people soft skills, and communication skills are pre-requisites for this established reputable business.

The person:

Our client at Global Talent 2020, is looking for a hands-on approach type leader, a "leader", with a focused, well organised mind. Possessing a positive personality, driven to achieve high service standards and results. This is a multi-tasking role, in an amazing rural location. You need to be someone used to always keeping their fingers on the pulse of an operation.

The client requires the candidate to possess first class people soft skills, with an ability to engage with customers, and colleagues alike. This role requires 4- or 5-star experience ideally within a hotel environment.
