Head Chef

Head Chef positon available in a luxury botel near Truro.

We are looking for the right candidate to lead this established, stable, long term and experienced kitchen team. As you would expect, this includes working evenings and weekends and you will be working no less than 45 hours per week over the 7 days consisting of 8, 10 or 12 hour days according to the needs of the business.

Previous experience of being a Head Chef in a similar establishment is essential. They are looking for an individual who is passionate about food, presentation and service but who also has the ability to lead a kitchen brigade with a firm but fair hand and who can develop the skills of the team. You will be required to ensure they maintain their 5* food hygiene rating and all that this entails.

Experience and Qualifications required

  • At least 2 years’ experience as a Head Chef
  • Food safety certificate level 3
  • Detailed knowledge of food allergens
  • Solid knowledge and experience of kitchen health and safety including HACCP, COSHH, Allergens, food safety procedures and documentation

Key tasks and responsibilities

  • Follow and document all food safety procedures and company policies and procedures
  • Ensure all meals are produced and presented to the required standard consistently
  • Kitchen financial targets are planned for and achieved, GP%, Wage%
  • Responsible for kitchen hygiene
  • Train and develop staff
  • Manage kitchen stock and ordering
  • Ensure maintenance of the Kitchen department and equipment and organise repairs when needed
  • Organising and oversee kitchen tastings and cooking of new menus with all the kitchen team to ensure complete understanding and consistency
  • Weekly forecasting, budgeting, analysis to keep within financial targets
  • Manage staff rotas

  • Able to work under pressure to meet deadlines
  • Passionate and enthusiastic about food, quality, preparation and presentation
  • Excellent communicator
  • Excellent organisation skills
  • In depth knowledge of all kitchen sections
  • Strong leadership skills to effectively manage and motivate a kitchen team
  • Self-Motivated
  • Business acumen to make sound decisions regarding menu prices and kitchen processes
