Princess Alexandra Hospital - Harlow CM20 1QX

37.5 hours per week - Rota based working 5 days out of 7 per week, including some weekends.

Typically shifts are 8 hours per day - Core service hours between 06.00 to 20.00 - flexibility on shift times required upon the needs of the service.

Band 4 - £14.82 (Weekdays), £19.05 (Saturdays) & £23.29 (Sundays & Bank Holidays)

Job Summary

The Head Chef works in close liaison with the Production Chef Manager to ensure the food production & service teams (catering & retail) deliver a high quality, cost effective and efficient service consistently for patients and staff. This is a busy kitchen facility which produces on average 21,000 meals per week.

Main Duties

  • To manage the kitchen day to day duties and lead in all areas of kitchen production for the hospital to manage the general production, portion control and safety of meals to patients and staff.
  • To be responsible for ensuring the food production for staff, patients and visitors meets all food and hygiene standards - The post will support in the conception, design, development, implementation and handover of all catering projects.
  • Keep within agreed budgets for:
    • In-Patient daily budgets.
    • Gross profit margins for retail.
    • Staffing running costs.
  • The post will support in the conception, design, development, implementation and handover of all catering projects.
  • To support the planning of meals as required satisfying specific dietary needs of the patient by liaising with the dieticians and support the creation and delivery of seasonal innovative menus.
  • Carrying out line management duties, for example sickness reviews, allocation of tasks, dealing with complaints and ensuring sufficient staffing levels
  • To have knowledge of Trust policies relating to Fire, Health and Safety, HACCP and COSSH regulations, and to be responsible for own mandatory training is up to date.

Person Specification

  • NVQ Level 3 or equivalent in catering, or higher.
  • Previous commercial experience with ability to bring innovation.
  • Understanding of H&S and HSE guidance.
  • Be prepared to work flexible hours as required by the needs of the service.

  • Able to work under pressure and to deadlines.
  • Ability to lead by example.
