Description

The Food & Beverage Industry Principles Level 2 (Complete) course is divided into fifteen comprehensive modules:

Module 1 – Safety at work in food and beverage service

This module covers safety aspect in the workplace. The learner will learn how to maintain safety in the workplace by following the safety procedures during work. You will also learn about the different types of hazard in the workplace that may occur and how to deal with these.

Module 2 – Hygiene at work in food and beverage service

In Food & Beverage service, high standard of hygiene needs to be maintained. In this module, the learner will learn how to maintain personal health and hygiene at the workplace.

Module 3 – Security at work in food and beverage service

This module covers the details of security in the workplace. The learner will learn how to follow organisational security procedures. It also includes how to follow emergency procedures correctly when necessary.

Module 4 – Personal skills and attributes in food and beverage service

This module will focus on developing your personal skills and attributes required in the food and beverage service. The learner will also learn how to plan and organise own work.

Module 5 – Customer care in food and beverage service

This module will cover customer care in the food and beverage service. The learner will learn how to establish rapport with the customers and communicate effectively with them.

Module 6 – Product knowledge in food and beverage service

This module deals with the skills and knowledge required to Develop and maintain food and beverage product knowledge.

Module 7 – Billing and checking procedures

This module deals with the Billing and Checking procedures. The learner will learn about the billing procedures and how to handle a variety of payment methods – cash and cash equivalent, foreign cash and traveller’s checks.

Module 8 – General pre-service procedures

In this module students will learn about the general pre-service procedures to be followed. It covers a variety of preparatory tasks and duties that needs to be carried out within the food and beverage service area.

Module 9 – Provide a table service

This module covers greeting customers and taking and serving food orders. It also covers ensuring that customers have everything they need and maintaining the service area.

Module 10 – Provide a silver service

This module covers silver-serving various foods and drinks and clearing cutlery, crockery and glassware.

Module 11 – Provide a counter service

This module covers how to serve customers at the counter. Be able to maintain counter and service areas. Know how to maintain counter and service areas

Module 12 – Provide a carvery or buffet service

This module covers preparing buffets and carveries and serving customers. It also covers clearing tables and keeping the area clean.

Module 13 – Provide other styles of table service

This module covers other styles of table service like serving by plate, family service and french service.

Module 14 – Provide a table drinks service

This module introduces students how to serve a range of beverages. The learner will learn how to advise customers on their choice of beverages including explaining the content and methods of production.

Module 15 – Final Assessment

This module has the final multiple choice examination. The learner needs to get minimum 80% in this multiple choice examination to receive the Certificate of Completion.

Who is this course for?

This Food & Beverage Industry Principles Level 2 (Complete) qualification is aimed at those working in, or who wish to enter, the hospitality and catering industry. This course is ideal for learners working as bar people/managers, conference and banqueting assistants/managers or waiters/waitresses who wish to develop or consolidate their skills in food and beverage service.

This course covers a variety of topics including the safety and hygiene at workplace, customer service as well as billing and checking procedures. It also deals with different types of Service Principles in Food & Beverage. Topics covered include the pre-service procedures, table service, counter service and so on.

Completion of this course will prepare learners to work in the hospitality industry where they would be expected to undertake a range of duties including serving customers, serving food, serving drinks, handling payment and cellar duties.

This course is openly available to anyone wishing to learn more about Food & Beverage and would like to take part in a highly rewarding home study course.
