Overview

Most of us enjoy eating in cafes and restaurants or staying in hotels, but imagine life when there was a risk of severe illness or even death if something in a bought meal or packaged food triggered a severe allergic reaction. Those involved in food production, food preparation or food sales of any type, must know and understand the risks posed by allergens.

In 2014 the EU Food Information for Consumers Regulation became law in the U.K. part of the regulations was the naming of the 14 main allergens (although individuals may be allergic to more than this). Everyone in food industries should know these main allergens and understand how dangerous they are to some people. This knowledge has massive implications for how foods are handled and stored, and the importance of avoiding cross-contamination. This course is important for all food handlers, and is fully on line, being available via PC’s, tablets and smartphones.

A regulated qualification is delivered by a learning institution which is regulated by a government body. In England, the government body which regulates courses is Ofqual. Ofqual regulated qualifications sit on the Regulated Qualifications Framework (RQF), which can help students understand how different qualifications in different fields compare to each other. The framework also helps students to understand what qualifications they need to progress towards a higher learning goal, such as a university degree or equivalent higher education award.

An endorsed course is a skills based course which has been checked over and approved by an independent awarding body. Endorsed courses are not regulated so do not result in a qualification - however, the student can usually purchase a certificate showing the awarding body's logo if they wish. Certain awarding bodies - such as Quality Licence Scheme and TQUK - have developed endorsement schemes as a way to help students select the best skills based courses for them.
