The Business

Maloy and Flynn are working on behalf of there client which is a 4* hotel situated in the beautiful Leicestershire countryside, close to Lutterworth or Hinckley and within easy reach of Leicester itself. Coventry, Rugby and Stratford-upon-Avon are also nearby.

Main Responsibilities:

Second in command in the kitchen brigade, Sous Chefs need to be passionate, methodical and dedicated. The role involves assisting the Head Chef to take responsibility for the kitchen department, food cost, ordering, food and health and safety. You will be required to manage the kitchen brigade in the absence of a Head Chef as well as motivate the team and share knowledge, training and developing chefs within the team. Contribute to the production of food items in accordance with instructions from the Head Chef.

The successful candidate will be joining a brigade of nine plus kitchen porters, we offer a mix of menus from the Golf Bar serving Bacon Rolls and light snacks through to the a la carte restaurant where we can be serving lobster and steaks.

We are a popular wedding venue which caterers for around 70 wedding plus other functions per year and can seat up to 120 for main meals / 190 for evening finger buffets

Day to day duties:

Be knowledgeable of the day`s business, i.e. know what reservations are booked in to the Food & Beverage outlets, be aware of outside events that will impact directly on business, etc.

•Ensure that all menu dishes are prepared with attention to detail and to the highest standard.

•Ensure all dishes leaving the kitchen/buffet are prepared to the approved standard of presentation.

•Avoid unnecessary wastage, to observe proper portion planning and control and to act in a cost effective, responsible manner.

•Ensure HACCP compliance within the kitchen and all Food & Beverage outlets.

•Ensure the kitchen equipment is in working order and report any maintenance issues.

•To contribute to the training and development of kitchen team.
