Our client is situated in a historic part of South Donegal offering relaxed hospitality combined with a first-class quality service.
Renowned for their attention to detail this hotel has a solid reputation of offering excellent quality food for all occasions from informal dining to weddings ensuring patrons return time and time again to enjoy the fine lovingly prepared fresh dishes.
This fine establishment is now seeking to appoint a passionate and talented Sous Chef to help oversee and drive the kitchen.

Role profile:
The Sous Chef will be responsible for running aspects of the busy kitchens within this hotel. With a strong understanding of profit and loss within a kitchen environment you will fuse your natural talent for cooking with your knowledge and skills in devising and delivering unique and mouth-watering meals and menus.
Duties will include supervising the production, preparation and presentation of all foods for the hotel as assigned by the Head Chef and to ensure a high standard at all times.
You will take full responsibility for the kitchen in the absence of the head chef and be able to manage a full brigade of chefs.
You will monitor and control the maintenance/sanitation of the kitchen and equipment to ensure a healthy, safe work environment which meets with all standard and regulations
It will the responsibility of the Sous Chef to keep HACCAP up to date at all times and to assist in the creation and planning of menus and daily specials; implement the necessary production changes to attract new business and ensure current guest satisfaction.

The successful applicant will demonstrate:
A genuine passion for delivering innovative and tasty food.
First class communication skills.
Experience in menu planning and delivery.
A flair for cooking and overseeing others in the kitchen to deliver results.
Previous experience at a similar level gained within a quality hotel environment. (ideally 4 years +)
Experience in effectively managing staff and budgets.
A thorough knowledge of HACCP.
Experience in budgeting and cost control.
Experience in dealing with suppliers.
A complete belief in customer satisfaction.
A hard-working attitude with high levels of motivation and enthusiasm.
The desire to secure a long-term role that will offer career development and job satisfaction.

Preference may be given to those with significant experience overseeing multiple kitchens under one roof and in particular to those demonstrating experience for high volume weddings and functions.
