My client is a recenty refurbished luxery hotel based in Tring.

Chef de Partie

Overall Objective: To assist the Chef(s) in the day to day running of the designated section of the kitchen, ensuring that the establishment standards are consistently maintained.

To take own responsibility for kitchen hygiene and food safety, in line with hotel food policy

Duties & Responsibilities:

  • To ensure all elements of the current menus are ready for efficient speed of service, considering any special dietary requirements; without supervision
  • Assisting the Head Chef with all areas of running the kitchen in line with the Food Policy & Health & Safety Policy
  • To assist Head Chef with menu development, concepts and costings

Key Tasks

To assist in the receiving and putting away of deliveries, ensuring that stock is rotated to achieve minimum wastage and is stored in compliance with the legislative requirements.

Standards and procedures in place.

To check deliveries when requested.

Goods received correspond with order book and delivery note; Quality of produce; Correct temperature.

Storage of food.

To work in an organised and hygienic manner, ensuring that all equipment and working surfaces are cleaned "as you go".

Standards and procedures in place.

To prepare food for all outlets.

To cook and present food for all outlets.

To maintain high standards of cleanliness; maintenance and security of department.

Observe Hygiene, Health, Fire & Safety Regulations
