In this course, you will consider some statistics relating to the food hygiene scheme (FHRS) and you will explore the FHRS, inspections and the FHRS scoring system in further detail.
You will also learn about food business operators (FBOs) that come under the FHRS and those that are exempt. You will also explore the consequences an FBO could face if they have a poor food hygiene rating and the benefits of having a good rating.
Yoi will cover all of the areas that a EHO will focus on during a food hygiene rating inspection, so you can ensure you meet all the standards required.
You will also learn what happens before, during and after a food hygiene rating inspections and what environmental health officers (EHOs) look for and the areas covered. You will also learn about appeals and the right to reply and re-visit if a food business operator receives a lower rating. You will also look at where you can find guidance on the food hygiene rating scheme and how self-inspection can help improve a business’s rating.
You will also look at food handling, preparation, storage, transportation, handwashing and personal hygiene, food hygiene and safety, structure, cleaning and food safety management and how these areas contribute to the total score and overall food hygiene rating.

- Unit 1 – Introduction to the Food Hygiene Rating Scheme – In the first unit of the course, you will explore statistics on food hygiene ratings in the UK, what the food hygiene rating scheme (FHRS) is and where it applies. You will also look at the relevant laws that apply to food business operators (FBOs).
- Unit 2 – Before, During and After an Inspection – In this unit you will explore how you can register your food business and the powers of an EHO. You will also learn how you can prepare for an inspection and what to do when the EHO arrives and after.
- Unit 3 – Food Hygiene and Safety – In this unit you will consider food hygiene and safety procedures that you need to carry out in order to achieve a good food hygiene rating. You will also look at what you shouldn’t do.
- Unit 4 – Structure and Cleaning – In this unit you will cover the structure of the premises, equipment, cleanliness, maintenance, layout, facilities, pest control and waste management and how to ensure you comply with each one.
- Unit 5 – Food Safety Management – In the final unit of the course, you will look at prerequisites, food safety management procedures/systems, HACCP, records, staff training and other management areas. You will also consider poor practices that may result in a poor score.
