Employees in the food industry are faced with a number of risks on a daily basis and it is the role of each individual to be aware of these risks and to understand the steps that should be taken to effectively manage, or eliminate them. Our Hazard Analysis and Critical Control Point course (HACCP) is a great starting point and offers an informative insight into HACCP procedures. The course also adheres to EU requirements to have an effective food safety management system based on the Codex HACCP principles, in operation.

The correct working practice will be taught, enabling you to feel confident in the work environment, as well as a detailed look at food safety and how to avoid the potentially dangerous risk of cross contamination. Helping you to understand the topic thoroughly, the course will also guide you through the legislation in England, Wales and Scotland.

Description

For convenience, the course has been divided into 6 manageable sections that you are free to complete as and when you choose. Regular breaks can be taken (if you wish) and sections can be completed entirely at your pace. A few short questions will be asked at the end of each section to refresh your memory and there will be a final ‘End of Course’ multiple choice quiz that will require you to answer a certain number of questions correctly to pass.

Course Content

  1. The HACCP Level 2 Course kicks off with ‘An Introduction to HACCP’ and this offers a basic insight into all things HACCP related. Some important terminology you should be familiar with is outlined, as well as a glance at legislation and what is legally required in the food industry.
  2. Following on into module 2, ‘Types of Contamination’ is the focus of this section. You will learn all about allergens, chemical and bacterial contaminants and food borne illnesses. It is vital employees are equipped with the knowledge of how to avoid cross contamination and the difference between physical, chemical, microbial and allergenic contamination will be highlighted.
  3. ‘Assessment Procedures’ will help you to understand what exactly a ‘pre-requisite’ programme is, how to distinguish between them and also how to complete an in-depth assessment.
  4. Section 4 takes a look at ‘Formulating a HACCP System’. You will learn useful tips about how to create a capable HACCP team to co-ordinate strategies, as well as a valuable insight into the 7 principles of the HACCP system.
  5. ‘HACCP Control’ is the following module and this offers a fantastic awareness of the important subject of critical control points regarding preparing and serving food to the public. Tips for identifying risks will be suggested, as well as teaching you how to create a ‘decision tree’.
  6. The closing module, ‘Maintenance and Ongoing Management’ will teach you about workplace audits and the steps that should be taken if a problem arises.
