It will not be possible to produce safe clean food in dirty premises. Cleaning is a fundamental requirement and is part of prerequisite systems for HACCP. Cleaning must be regular and systematic. Colour coding is essential and cleaning chemicals must be used correctly, in correct concentrations. There has sometimes been a tendency for cleaning to be done haphazardly, by staff who regard cleaning as not their primary role, but it cannot be underemphasised that responsibility must be allocated to ensure cleaning is carried out correctly to minimise bacteria and contamination. This course is essential for anyone who cleans in the food industry, either their own areas, or working as dedicated cleaners. Cleaning methods and frequency should be determined by risk, and because of this, supervisors could find this course useful in designing systems, although it has been primarily designed to raise awareness in those who have responsibility for cleaning.

This level 2 course is 1.5 hours, to include the 30 multi-choice question assessment. The user must achieve a pass rate of 75% to be able to print their accredited certificate directly from their PC. The user can also e-mail the certificate to another printer if required. The certificate has a QR code which, if scanned by a smartphone, will enable certificate validation.

Everyone who cleans in the food industry, or who is responsible for cleaning. Many underestimate the science of cleaning. It is a technical subject and in order to achieve maximum cleanliness and sanitation, it must be done correctly. This is a vital topic for any food business. There are no pre-training requirements for this course.
