The Catering Services Manager Role:

As a Catering Services Manager, you will lead the commercial Catering Operations across the College sites, to include quality hot and cold food production and service, the staff and budgets. Responsible for meeting customer (students, staff, visitors) expectations and ensuring food and hygiene standards are met.   On average 1400 sales transactions per day.

You will also recruit and manage staff, plan menus and work to budgets and financial targets including the sustainability of suppliers and our carbon footprint.   The role has direct and indirect line-management responsibilities for a Team of 21 staff, comprising 2 Catering Supervisors, and 19 Catering General Assistants.  The role will deploy these resources effectively, efficiently and within budget and in support of teaching and learning, enhancing the student experience. 

Responsibilities as our Catering Services Manager will include: 

  • Delivering a quality, fit for purpose food and hospitality provision across Bournemouth & Poole College
  • Developing and maintain catering policies, guidelines, and standard procedures, ensuring these are regularly refreshed to capture professional best practice and future-proof the service offer
  • Preparing and managing the annual operational budget (2023/4 was £650k) with a zero-subsidy approach; liaise with Finance colleagues to ensure accurate and timely reporting of income and expenditure against plan and forecast, conduct month on month benchmarking including price comparisons.
  • Being responsible for all cash and card takings and consolidation, including consolidation of the vending monies
  • Managing and developing all catering staff, ensuring that College HR processes for staff recruitment, training, staff meetings, performance management and absence planning are followed.
  • Monitoring demand for Catering Services and support the Team in workload management. Term time and non-term time organisation and scheduling.
  • Menu Planning, ensuring a range of healthy and popular choices are available including all allergen signage as required.
  • Carrying out all audits and stock-take on a regular basis.

As our Catering Services Manager, you’ll ideally have:

  • Good level of education, GCSE or equivalent including English and Math’s
  • CIEH Level 3 Food Safety
  • Level 3 NVQ or industry experience
  • COSHH
  • HACCP Level 2
  • A background in Catering Management with the technical skills to manage chefs, kitchen staff and hospitality staff.
