Overview
The issue of food defence is becoming increasingly important within the food industry. Hence the need for a systematic approach to the identification and management of threats and vulnerabilities is accelerating and becoming incorporated into industry standards, such as BRC Food Safety Version 7.
There is currently much debate surrounding the requirements of a TACCP system for Food Defence and a Raw Material Vulnerability Assessment.
This course has been designed to give learners the knowledge and skills to conduct a TACCP (threat and vulnerability assessment) within the food processing operation, and a Raw Material Vulnerability Assessment on the raw material supply chain.
