- Describe the principles of menu development in meeting customers’ needs and wants
Module 2 - Recipes
- Investigate sources of recipes and assess ways of adapting recipes
Module 3 - Purchasing
- Describe the key aspects of purchasing principles and their impact on a business
Module 4 - Specifications
- Demonstrate the use of specifications to control and manage the operation
Module 5 - Food preparation
- Describe options for food preparation in fast food environments
Module 6 - Service
- Recognise the value of service to the successful operation of a fast food business
Module 7 - Marketing
- Describe stages of marketing a fast food business
Module 8 - Controls
- Describe the role of schedules, plans and controls in managing the operation
Module 9 - Standards
- Describe the use of standards and the benefits which they bring
Module 10 - Training
- Demonstrate the benefits of training staff and discuss a training plan
Module 11 - Physical plant
- Assess physical plant and equipment needs for a typical fast food business
Module 12 - General layout and design principles
- Design a kitchen, storage and servery based on established principles
Module 13 - Safety
- Demonstrate an understanding of risk and hazards, and describe prevention measures
Module 14 - Hygiene
- Describe how good hygiene practice affects a fast food business
Assessments
Assessments are a great way of checking your progress allowing you to apply your learning to real-world situations. Through the Snack Bar-Cafe and Fast Food Management Course by NCFE, students will be assessed by a series of written assignments, which are submitted to and marked by your tutor.
All assignments are set by NCFE. Upon verification of the activities, exercises and assignments, a certificate of achievement will be awarded by the national awarding organisation NCFE, as confirmation that your written work has met all of the learning outcomes and assessment criteria for the programme.
There is no external examination required.
